Grow yacon, a South-American yam-like plant, on your allotment or at the back of your garden bed and look forward to tending this rare and intriguing vegetable for harvests of water-chestnut-like tubers.
You can pretty much let the roots underground mature for themselves after planting. In the meantime enjoy the fact that the plant produce sunflower-like blooms, brightening up the vegetable plot. These flowers make ideal flowers for vases indoors and the plants make effective windbreaks when planted in a row, useful when you have an exposed plot.
When the flowers begin to wilt it is time for harvesting the large tubers underground. In the kitchen we suggest that you prepare Yacon by peeling, chopping and steaming the tubers. The texture is like water-chestnut and the flavour is sweet.
