Artichoke seeds should be sown indoors in late winter or early spring, typically between February and March. Starting them early gives the seeds enough time to germinate and grow into strong seedlings before being transplanted outdoors. For outdoor sowing, wait until the risk of frost has passed, usually around late April or May, when the soil has warmed up sufficiently.
