Sow Outdoors
Harvest
Sow thinly about 1in/2.5cm deep, from end of February until May. Thin to 6in/15cm apart. Later sowings will germinate quicker and avoid the worst effects of parsnip canker.
How To Grow
Parsnips are the quiet achievers of the veg patch – unassuming on the surface, but dig a little deeper and you’ll be rewarded with sweet, earthy roots that only get better with time. Hardy and low-maintenance, they’re happy to grow slowly through the season, delivering delicious flavour in autumn and winter dishes. A frost or two only improves their sweetness, making them a true cold-weather treat.
Outdoor Sowing Sow parsnip seeds directly outdoors from early spring. Be patient as they take time to germinate, but once established, they need little care beyond occasional watering and weeding. Plant seeds 1cm deep, spacing 15cm between plants and 30cm between rows. Parsnips don’t require staking or special attention, making them one of the easiest root crops to grow.
Harvesting Lift parsnips from autumn onwards, but for the best flavour wait until after the first frosts. Cold temperatures trigger a natural sugar boost, giving roots their characteristic sweet, nutty taste. Leave some in the ground over winter and harvest as needed.
Companion Planting Sow fast-germinating radishes alongside parsnips. Radishes loosen the soil for the slower parsnips and provide an early crop while you wait for the main harvest.
