Oxalis tuberosa is more commonly known as Yam or New Zealand Yam – due to their popularity in the country as a table root vegetable. Originating from the South American Andes it forms underground tubers like a potato plant but they are smaller, crunchier and really satisfying.

Oca gives you lots of edible underground yams which can be eaten cooked or raw, when raw it has a lemony flavour, becoming nuttier once cooked.

Ocas are not so hungry like potatoes so fair well if your plot is made up of shallow and poor soil.

We recommend you harvest approximately three weeks after the first frost has killed the plant canopy in late November or December.
